Koji Cocktails

When I was a child, my mom made me a drink called “Tamago sake (egg sake)” when I got cold. Mix an egg, sugar and then hot sake little by little. Tamago sake is a sweet and creamy drink. It may be like eggnog (*) in England.  I loved this drink when I was small and always asked my mom to make one. This proves that I have been a sake lover since I was a kid even though alcohol should be evaporated by heating it!

Major cocktails are usually made with spirits like gin, vodka, tequila or rum. But Japanese sake and amazake can be used to make cocktails too like tamago sake.

For instance, Japanese sake and lemon juice make a refreshing taste drink. Add some sweetness or fizz to make it easier to drink. Although you are not good at sake, you would like this one.

no-32_koji_cocktailsA type of sake for cocktails is rather one you don’t like than good one that you like because you should enjoy the good one as sake not cocktail.

Amazake is also good to be a cocktail. Add amazake and fizz to sake. It is nicely fizzy with a hint of sweetness. I can’t stop sipping it.

Amazake is nutritious, sweet, mild and rich in taste. Don’t forget to mix it well as the koji or rice pulps sink onto the bottom of the glass.

Amazake actually goes well with beer. The sweetness of amazake reduces the bitterness of beer. White rum is often used for cocktails and matches perfectly with amazake as well. A drink mixing of white rum, amazake and soda water taste great! You can also try other flavors of liquor like cherry in place of white rum.

*An alcoholic drink made with rum or brandy, egg, milk and sugar. Usually garnished with nutmeg or cinnamon.
