Beans and Vegetables Pickles

SERVES: the amount that can be made easily

 

INGREDIENTS:

・100 g soy beans or other beans you like, blanched
・1 red bell pepper
・1 cucumber
・50 g raisins
・1 1/2 tbsp shio-koji
・75 ml vinegar
・75 ml water
・1-2 bay leaf
・1 chili, deseeded

 

INSTRUCTIONS:

1. Cut the bell pepper and cucumber into 1 cm cubes.

2. Put all the ingredients into an airtight plastic bag. Rest it in a fridge for 30 minutes to 1 night, turning it upside down at times.
