Miso really matches with cheese, olive oil and anchovy and also tie all the flavour together and increase the umami flavour.
・ 2 tbsp miso
・ 2 filet anchovy (chopped)
・ 15 ml white wine
・ 80 ml Extra virgin olive oil
・ 1 clove garlic (chopped）
・ 10 ml lemon juice
・ 1 egg yolk
・ Gruyère cheese or parmesan cheese
・ some salt and pepper to taste
1. Put the egg yolk, anchovy, white wine, lemon juice, garlic, salt and pepper, mix well using whisk.
2. Add olive oil gradually to make emulsion with whisking. Then, stir in cheese.
3. Mix the dressing with lettuce and serve it. Garnished with sauteed bacon and crouton.
