Cherry Tomato Pickles

SERVES: the amount that can be made easily

 

INGREDIENTS:

・18-20 pieces (200 g) cherry tomatoes

<Pickles marinade>
・2 tsp (14 g) akazake (or mirin, sweet sake)
・1 tsp (5 g) vinegar
・2 tsp (14 g) honey
・some mustard seeds if you like

 

INSTRUCTIONS:

1. Remove hulls from the cherry tomatoes and pick the skin.

2. Bring the water to a boil and blanch the tomatoes for 30 seconds. Then soak them in cold water and peel the skin. In case of normal sized tomato, cut into mouthful size after peeled.

3. Mix all the ingredients of the pickles marinade and marinate the tomatoes in a fridge for at least 12 hours.
