・1 fillet (250 g) chicken breast
・2 tbsp. (30 g) white wine
・2 pieces (200 g) cucumber
・1 tbsp. (18 g) soy sauce
・1 tbsp. (15 g) wine vinegar or lemon juice
・1 tsp. (8 g) extra virgin olive oil
1. Prick chicken breast with a fork on both sides.
2. Put the chicken, white wine, and salt into a just-sized and thick-bottomed pan over medium heat. Once it boiled, turn upside down and simmer for 5 minutes with a lid. Turn off the heat and rest to cool it down. Then flake the chicken by hands.
3. Cut the cucumber lengthwise, then slice diagonally.
4. Dress the cucumber with the dressing ingredients well.
*Make sure not to throw away the cooking juice and use it for other dish!
