Chicken Miso Gaprao

Nam pla is a Thai seasoning made from fish. When using miso instead of oyster sauce, umami flavor of miso and num pla harmonize together.Chicken Miso Gaprao_©Cupido



・ 150 g chicken (minced)
・ 10 leafs basil
・ 1/4 red pepper (batoned)
・ 1/4 green pepper (batoned)
・ 1/4 onion (batoned)
・ 2 cloves garlic (chopped)
・ chilies (deseeded)
・ cooking oil
・ 1 tbsp. white wine
・ 1 tbsp. nam pla or soy sauce
・ 2 tbsp. miso
・ 2 tsp. sugar
・ 2 egg (fried)
・ 300 g rice (cooked)


1. Stir-fry the garlic and chilies and add minced chicken over high heat. Once chicken cooked like crumble, add white wine. When the liquid reduced , take out the chicken and set aside.
2. Using the same frying pan, fry the onion, pepper bells until soften.
3. Then put chicken back into pan, add the left of seasoning. When the liquid reduced, add basil. Serve with rice and fried egg.
