The meaning is 「Teri」＝shine,「Yaki」=pan-fried. It means pan-fried and glaze meat with teriyaki mixture. This is the authentic Teriyaki method in Japan and superb sweet and soy sauce salty taste. If you can’t get “mirin”, you can add 1 more tsp sugar instead of 2 tsp mirin.
・ 300 g chicken leg (bone off)
・ some cooking oil
・ 50 ml sake or white wine
・ 2 tsp mirin
・ 2 tsp sugar
・ 2 tbsp soy sauce
1. Remove excess fat from the chicken, cut shallow the chicken skin overall using the tip of knife to avoid the skin shrinking. And it makes easy to absorb the taste.
2. Heat the frying pan with cooking oil, and pan fry-the chicken on skin side at first over medium heat until crispy.
3. Turn the chicken to another side and fry until 80% cooked. And then, add teriyaki mixture and reduce the liquid to glaze. Cut and serve it.
