There is a quite popular snack called “morokyu” in Japanese izakaya. “Moro” means “moromi-miso” which is a kind of miso or soy sauce. “kyu”, means “kyuri”, is a cucumber and the combination is wonderful! However, you may not be able to get “moromi-miso” in your country because it’s not so popular outside Japan. Therefore, I use normal miso and cucumber into the salad. The dish goes well with white, rose, or sparkling wine besides beer and shochu.
・200 g cucumber
・1/2 tsp salt
・40 g tuna or oil sardine
・1/2 tbsp miso
・1 tbsp extra virgin olive oil
1. Smash down the cucumber lightly with a rolling pin and cut diagonally. Add the salt and rub by hand. Set aside for 4 minutes.
2. Meanwhile, mix all the seasonings in a bowl.
3. Add the cucumber after wringing out water and mix well. Serve it.
