Astringent persimmons have a sharp taste and cannot be eaten as is, but by drying the tannin (the substance that makes the persimmons astringent) can be lessened because it is water soluble, which means that it can be dissolved in water. It becomes insoluble, and thereby becomes less astringent. Drying also causes moisture to escape the fruit, which will cause the sugar content to become higher. For this reason, it is common to eat astringent persimmons as sun-dried persimmons or dried persimmons. Because it dries from the surface, rubbing during the drying process, it is something that needs to be done by hand. However, the ending taste is exceptional and is extremely popular alongside raw persimmons.
