Tabbouleh is a parsley and Bulgur wheat salad from Middle East Asia such as Turkey or Lebanese and they have original recipes depending on each family. In here, I use Japanese brown rice instead of Bulgur wheat . Brown rice is chewy and gives mild nutty flavour! This is quite healthy dish as both parsley and brown rice are highly nutritious!
・100 g Japanese brown rice
・1/2 bunch parsley (roughly chopped)
・1/2 tomato (1 cm diced)
・1/4 onion (chopped)
・some lemon juice
・salt and pepper to taste
・some extra virgin olive oil
1. Bring the water to a boil and cook brown rice for about 20 minutes, then drain it and cool down.
2. Combine all the ingredients in a bowl. Serve it immediately.
