Matcha and Rice Flour Muffin Filled with Red Bean Jam

What do you want to add to the plain rice flour muffin? I recommend you to put matcha and red bean jam! Natural Sweetness of rice flour goes well with matcha favour. In case you don’t eat freshly baked one, make sure to reheat it up just before eating. The melting hot red bean jam can be fully enjoyed!

SERVES: 4 Pieces

 

INGREDIENTS:

・1 (55 g) egg
・40 g sugar
・80 ml milk
・40 ml grape seed oil, or other oil doesn’t have strong flavour
・145 g rice flour
・6 g matcha powder
・6 g bicarbonate of soda
・1 pinch of salt
・4 tbsp. red bean jam (anko)

 

INSTRUCTIONS:

1. Put egg and brown sugar into a bowl, whisk well until it turns pale and increases in volume bombe.
2. Stir in vegetable oil and milk into the 1, then sift to add rice flour, matcha powder, bicarbonate of soda and salt.
3. Spoon the mixture into a muffin cup to 20% high. Then place red bean jam onto it. Cover with the 2 mixture up to 80% high.

4. Bake in a oven at 180°C for 20 minutes.
