Rice flour sable has a rustic charm and you can enjoy the natural sweetness of rice flour. I created the recipe with some milk with less butter, so it’s very easy to handle. Enjoy the simple sable with refreshing lemon flavour.
SERVES: 18 Pieces
・40 g butter (at room temperature)
・25 g sugar
・15 ml milk
・100 g rice flour
・1 pinch of salt
・1/4 lemon zest
1. Whisk butter, sugar and lemon zest until smooth. Add egg and sifted rice flour, then mix with a spatula. Gently knead the dough by hands for just 30 seconds and wrap with cling film. Then rest in a fridge for 30 minutes.
2. Roll out to 5 mm-thin and cut with a knife. Place in a baking tray and prick with a fork. Bake it at 190°C for 15 minutes.
