【Gluten-Free × Soybean Flour】 Kinako Cookies

Kinako is made of roasted soybean and has very aromatic flavour as well as high nutrition of mineral and good protein. Also, it goes well with brown sugar. So I recommend you to use brown sugar, not caster sugar. Try the rustic charm of Japanese kinako Cookies!

・30 g butter (at room temperature)
・30 g brown sugar
・1 pinch of salt
・60 ml soybean milk or milk (at room temperature)
・1/2 egg (at room temperature)
・100 g kinako (roasted soybean flour)



1. First of all, place butter, egg and soy bean milk at room temperature. Then whisk butter and brown sugar in a bowl, add egg, soy bean milk and sifted kinako (roasted soybean flour) and mix by hand.


2. Roll out the dough in between cooking paper to 5 mm-thin. Cut it with a knife in square.

3. Bake them at 180°C for 17 minutes. Remove its excess heat.
