SERVINGS : 2
2 cups water
10g dried tomatoes, cut into 5mm-piece
1 potato, cut into bite-sized chunks
Some arugula, washed, for topping
Cheese powder for topping
10g miso paste
1. Place water in a medium sauce pan and bring to a low simmer
2. Add dried tomatoes, simmer for 5 minutes.
3. Add potato and boil until it becomes soft
4. Drop eggs and break up the yolk slowly
5. Stir in the Miso. Place the arugula and cheese powder for topping.
6. Serve immediately
