There is a method of marinating fish or something with miso in Japan. It is the similar way of tandoori chicken. Miso match with Indian spice and yogurt. We can say miso is a magical all-round seasoning!
・ 400 g chicken leg
・ 25 g sugar
・ 4 cloves garlic (chopped)
・ 1 clove ginger
・ 3 g cumin powder
・ 3 g curry powder
・ some cayenne pepper to make hot
・ some paprika powder to colour
・ 50 g miso
・ 2 tbsp. soy sauce
・ 1 tbsp. honey
・ 1 tbsp. yogurt
・ 1/2 tsp. salt
1. To make the mixture, put everything except chicken into a plastic bag or a container. Mix well. Then add the chicken into it. Rub it.
2. Let it marinate for about 2 hours in a fridge.
3. Bake in the oven at 250°C for about 20 minutes. Serve hot.
