Miso goes well with dairy products and the béchamel sauce as well. While béchamel sauce is usually flavoured with nutmeg and salt, I use miso instead of them. The miso gives rich and superb taste!
・ 4 white bread (12 mm sliced)
・ 2 ham (sliced)
・ 70 g Gruyère cheese (shredded)
<Miso béchamel sauce>
・ 160 g milk
・ 10 g butter
・ 10 g flour
・ 2 tbsp. miso
1. To make the béchamel sauce, melt butter in a saucepan. Stir in flour and cook it for just a minute. Add milk a little at a time and stir well not to make lump.
2. Bring the mixture to a boil and stir well for a couple of minutes until thicken. Remove from the heat and stir in the miso. Set aside.
3. Spread all the side of the bread except the bottom with the béchamel sauce, then put the ham between the bread. Sprinkle cheese on top layer.
4. Put it into a toaster oven for about 5-10 minutes until cheese gets golden brown. Serve it immediately.
