We have a traditional dish of cucumber with a miso dip called “Morokyu” in Japan. People love to eat it with sake or beer. Miso gives the umami flavour to light-taste ingredients. It goes well with the sour cream and is perfect not only as a snack with alcohol but also as a refreshing salad.
・ 200 g cucumber (0.5 mm sliced)
・ 1/2 tsp. salt
・ 90 ml sour cream
・ 2 tsp. miso
・ 2 tsp. dill or parsley (chopped)
・ 1 tbsp. wine vinegar
・ some pepper
1. Slice the cucumber and sprinkle some salt. Set aside for about 30 minutes.
2. Put the sour cream, miso, vinegar, dill, and pepper into a bowl and mix it.
