Salt can be used to extract the sweetness of the pastry. In this recipe, I use miso instead of salt. It plays a role of salt and gives good miso flavour. It goes well with walnuts’ aromatic flavour. Try the nice “sucré salé (sweet and savoury)” taste!
・ 25 g caster sugar
・ 50 g butter (at room temperature)
・ 20 g miso
・ 1/2 egg
・ 100 g flour (shifted)
・ 15 g walnuts (roughly chopped)
1. Mix butter and sugar in a bowl using whisk and stir in miso. Then, add egg, flour, and walnuts with spatula. Wrap with a cling film and make it bar-shaped. Chill it down in a fridge for about 2 hours.
2. Remove the cling film, slice it into 1.5cm’ thickness and line up in a baking tray. Bake it for about 10 minutes at 180°C.
3. Cool it down for a while to remove the excess heat. Serve it.
