Pan-Fried Aubergine with Spicy Miso Sauce

INGREDIENTS:

・3-4 (250 g) aubergine
・cooking oil
・1 clove ginger

<Spicy miso sauce>
・25 g miso
・10 g sugar
・10 g white wine
・1 tsp. (2 g) curry powder

 

INSTRUCTIONS:

1. Peel the aubergines lengthwise in zebra stripes and soak them in water for about 10 minutes to remove harshness. Meanwhile, shred the ginger.

3. Pan-fry the ginger and aubergine with enough cooking oil until flagrant and cooked. Then add the spicy miso sauce mixture and dress it well.
