【Pastry × Soy Sauce】
Soy Sauce and Black Sesame Scone

We use soy sauce with sweet pastry in Japan. “Mitarashi-dango” is grilled rice cake with sweet soy sauce and “Senbei” is a rice cracker with soy sauce. They are traditional and quite popular pastry. You can also try the English scone with soy sauce in this recipe. It’s suitable at teatime!


SERVINGS:8 pieces


・ 250 g blead flour
・ 13 g bicarbonate of soda
・ 62 g butter (1 cm cube)
・ 37 g sugar
・ 1 egg
・ 15 ml soy sauce
・ 47 ml milk
・ 20 g black sesame seed

<Egg wash>
・ 1/2 egg yolk
・ 1 tsp. water


1. Cut the butter into cube and chill it. Sift the flour, sugar and bicarbonate of soda into a bowl, add the butter using a spatula. Then rub to mix by hand using finger tips. Need to rush, or butter melted.
2. Add, milk, egg, soy sauce, sesame into 1 and mix. Don’t knead. Take it out to the pastry board and cut out dough with a circle or cut with a knife. Divided it into 8 pieces and put onto a baking tray.
3. Mix egg yolk and water to make egg wash, spread it on the surface of scone. Bake it for about 13-15 minutes at 200 °C. Serve it.
