The Joyful Gluten-Free Baking from Japan


“Gluten-Free Diet” is a diet excludes gluten found in wheat and related grains. The method has been attracting attention recently in cases of wheat allergy or losing weight. Not only the gluten-free diet, but there are many healthy ones. However, I suggest the diet menu should look really tasty and actually taste wonderful!! Otherwise, it is difficult to keep on trying.

I introduce you “Gluten-Free Baking” recipes using rice flour, buckwheat flour and roasted soy bean flour. These kinds of flour are different from wheat flour in containing no gluten as well as in water absorbency. So if you merely use gluten-free flour instead of wheat flour in the same way, it doesn’t come together or doesn’t rise enough.

In Japan, some rice flour mixture for bread, which some amount of gluten are added to make bread making easy without fail, can be found on the market. However, I don’t think you might get that kind of mixture in your country. So, I created these recipes with pure rice flour and simple ingredients. Enjoy your gluten-free baking!
