Tofu and Edamame Soup


SERVINGS : 2 bowls

150g tofu drained and cubed
150g frozen edamame
1/2 onion, chopped
20g butter
300ml water
3 tbsp milk
salt to taste
white papper to taste

1. Heat butter and saute onion in a pan
2. Add water when the onion turn transparent. Add edamame and tofu and boil for 10 minutes
3. Turn off the heat and purée a blender
4. Put 3. back into a pan, add milk and heat
5. Add salt and pepper when it is boiled, and then turn off the heat
6. Ladle the soup into bowls and top with some edamame
