Tofu Minestrone Soup


SERVINGS : 2 bowls

150g tofu drained and cubed
40g bacon, cubed
1/2 onions, cubed
100g white kidney bean, boiled
1 canned tomato
1 garlic clove, chopped
1 tbsp olive oil
200ml wator
1tsp dried herbs (for example: parsley)
1tsp parmesan cheese
1/2 tsp salt
1/2 tsp pepper

1. Heat olive oil and chopped garlic in a pan
2. Add bacon and onions, and soute the onions until they turn transparent
3. Add canned tomato, and then add white kidney beans after the tomato is boiled. Boil them for 10 minutes
4. Add tofu, salt and pepper. Turn off the heat when it is boiled
5. Ladle the soup into bowls and top with the parmesan cheese and the dried herbs
