Tomato Soup with Rice Flour Balls





<Rice flour balls>
・80 g rice flour
・1/2 tbsp. cornflour
・80 ml hot water

<Tomato soup>
・1 tsp. olive oil
・1/2 onion (1cm cube)
・40 g carrot (1cm cube)
・40 g bacon (1cm cube)
・200 ml chicken stock
・1 (400 g) diced tomato can
・salt and pepper to taste


1. Put the rice flour and cornflour into a bowl and stir in the hot water with a spatula. Then, knead the dough well by hands. Divide into 10 pieces and push it by the finger to oval shape.
2. Bring the water to a boil, and blanch the dough until floating. Then, put them into iced water and drain.
3. To make tomato soup, put the olive oil into a pan and pan-fry the bacon, onion and carrot over the medium heat.
4. Add the diced tomato and chicken stock into the 3 and cook for 5 minutes, then add the flour balls and simmer for another 5 minutes. Adjust the taste with salt and pepper. Serve it.
