Yuzu-kosho is made of chili and yuzu (citrus). It has very hot taste and smells refreshing. “kosho”means “pepper corn” in Japanese. But yuzu-kosho never contains pepper!!
・ 1 tsp. yuzu-kosho
・ 1 tbsp. soy sauce
・ 1 tbsp. rice vinegar or white wine vinegar
・ 1 tsp. sugar
・ some salt to taste
・ 4 tbsp. extra virgin olive oil
・ chicken brest salad
1. Put yuzu-kosho, soy sauce, vinegar, sugar and salt into a bowl and mix well with whisk.
2. Add olive oil gradually to make emulsion and keep whisking vigorously.
3. Serve with salad.
